Bona Furtuna’s wild foraged fennel pollen tastes like a fennel seed but significantly sweeter and more intense, with subtle hints of honey, hay, and citrus. Golden yellow with rustic green specks and a musty, deeply floral aroma, it makes a delightful garnish on poached salmon or chicken. Rub it onto pork chops or Muscovy duck, sprinkle it on pasta and vegetables, or bake it in shortbread.
